Harvest: Hand-harvested in crates during the last week of August and the first week of September

Vinification: Gentle pressing of the grapes followed by alcoholic fermentation in stainless steel tanks at controlled temperature
Secondary fermentation: In-bottle second fermentation and aging on lees for 24–36–48 months

Color: Bright straw yellow with a fine, dense, and persistent perlage
Aroma: Elegant and complex bouquet with pastry notes interwoven with hints of citron and bergamot, followed by nuances of apple, anise, fern, and delicate floral tones
Taste: Tense, long, and satisfying palate with well-integrated effervescence and a refreshing minerality

Pairings: Exceptionally versatile at the table; perfect with seafood, shellfish, mollusks, sushi, risottos, “riso, patate e cozze,” pizza, and fresh cheeses
